Whole Grain Muffin
Brushetta

Xandria is in second grade. She submitted her Whole Grain
Muffin Brushetta recipe with her Aunt Becky.
Ingredients:
12 Whole Wheat Toaster Muffins
- 1 Small Bunch of Fresh Basil
- 6 Chopped Roma tomatoes
- 2 tsps of Minced Garlic
- Extra Virgin Olive Oil
- Salt
- Pepper
- 1 Package of Low Fat Mozzarella Cheese
- 1 Package of Turkey Pepperoni
Directions:
1. Pre-toast muffins and set aside.
2. Dice basil then set aside.*
3. Dice tomatoes, about ½" squares, place in medium bowl with
garlic. Add olive oil-to moisten. Add salt and pepper for
taste.
4. Stir in mozzarella cheese and ½ of basil.
5. Top muffins with tomato mixture and turkey pepperoni.
6. Toast on a sheet tray in a 350 degree oven. Leave in oven for
10 minutes or until cheese melts.
7. Top with extra basil after cooking.
*You can also chiffofnade basil - stack 6-8 fresh basil leaves
on top of each other, roll leaves up tightly, and slice very, very
thinly crosswise. Have an adult help you with this task.
