Make Frozen Lime Pie with Tracy Maines

Learn how to cook this sweet dessert of Frozen Lime Pie with Tracy Maines. We’re giving viewers a taste of our Seasons at the Lake documentary. Here’s how you can make this recipe:

Frozen Lime Pie (pg 279 in My Cottage Kitchen Cookbook)
Filling:
2 cans (14 ounces each) sweetened condensed milk
3 egg yolks
1 1/4 cups fresh lime juice
2 (9 inch) graham cracker pie crust
Meringue:
1 cup egg whites
1 cup sugar
Zest of 1/2 lime
Filling:
Preheat oven to 300 degrees.
In the bowl of an electric mixer combine the milk, egg yolks, and lime juice. Mix on medium-low speed.
Divide mixture evenly between the two pie crusts and bake for 8 minutes until just set.
Remove from the oven and set aside to cool completely.
Meringue:
Preheat oven to 350 degrees.
In the bowl of an electric mixer combine the egg whites and sugar; beat on high speed until stiff peaks form.
Spread the meringue on top of the pies by starting at the edges, mounding in the center and pushing back out to the edges. Bake for 5 minutes or until the meringue is lightly browned. Cool on a wire baking rack.
Freeze for at least 6 hours before serving. Garnish with lime zest.
Makes 2 pies

    THE ALLEGHENY FRONT - Officials from the Department of the Interior and the White House announced Wednesday $33 million in spending to clean up orphaned oil and gas wells on federal lands in nine states, including Pennsylvania. The funding is part of the Bipartisan Infrastructure Law, and focuses on 277 orphaned oil and gas wells considered high priority polluting wells in national parks, national wildlife refuges, and on other public lands.

    VESTAL, NY (WSKG)—The Broome County Land Bank voted Tuesday to accept a $2 million grant from the City of Binghamton. The money comes from the city’s $46 million American Rescue Plan Act allotment.

  • The Diocese of Rochester proposes settlement of bankruptcy case; survivors of sexual abuse push back

    ROCHESTER, NY (WXXI) - Lawyers for people who say they were victimized by child sexual abuse from clergy in the Rochester Catholic Diocese are unhappy with an attempt by the diocese to settle those claims in U.S. Bankruptcy Court. Attorney Jeff Anderson, who is one of the lawyers representing 175 of those who are claimants in the lawsuits, said that the diocese is trying to force a $147 million dollar settlement on 475 survivors and victims of clergy sexual abuse.
